Overnight Eggs

T’was the night before Christmas when a chef slept so easy

For breakfast was already cooking, the eggs will be so cheesy!

The kitchen gadgets were all put away in their cabinets with care,

Only a crock pot was needed- throw everything in there!

Take a few minutes to compile this slow cooker meal before you go to bed this evening– you’ll wake up to  breakfast ready for a crowd. As much as I love to cook, Christmas morning is about relaxing with the family. Enjoy your holiday, and your breakfast!

Overnight Eggs [adapted from The Better Baker]

  •  1 lb. bacon- cooked and chopped
  • 1 small onion, diced
  • 2 small bell peppers, chopped
  • 12 oz bag frozen potatoes [cubed]
  • 1 cup shredded cheese
  • 6 eggs
  • 1/2 cup milk
  • salt and pepper, to taste

Spray your slow cooker with non-stick spray. Put your potatoes, chopped bacon, onion, peppers, and cheese in your slow cooker. Mix together the eggs, milk, salt, and pepper. Pour the mixture over the ingredients into the slow cooker.

Cook on low for 6-7 hours overnight. [I’d recommend starting this as late into the night as possible or get up early to turn it off- you don’t want to prep the eggs and let it sit out without cooking, ya know?]

Serve with ketchup and coffee! And presents! And biscotti!
