Sure the new calendar year begins in January, but I think the best time of year for a fresh start is in the Spring. Who actually feels inspired to keep a go-to-the-gym-resolution when you can hide in your over-sized hooded sweatshirt and eat soup instead? Some of you may beg to differ, but I live in the north and that’s just how I see it. Spring is new, Spring is fresh. Spring means Summer is coming. Spring means flowers and colors and bright. Spring means warm.
Okay you get it.
You know what’s nice about choosing this fresh lifestyle in the Spring versus the dead of winter? It’s much easier to eat a clean, nutritious, healthy diet. Suddenly an abundance of fresh fruits and vegetables become available and it no longer costs you $6.00 for a single strawberry. [exaggeration, kinda] Suddenly you have no idea what to do with this abundance of fresh fruits and vegetables…
Salsa. The easiest and most impressive fresh start to your new spring regimen.
Fresh Mango & Avocado Salsa
You will need
- 2 mangos, diced
- 1 avocado, diced
- 4 small tomatoes, diced
- 1/2 red onion, diced
- 1 jalapeno pepper, seeded and diced
- 1/4 tsp salt, diced [kidding]
- 2 small garlic cloves, minced
- 1/2 cup fresh cilantro, chopped
- fresh lime juice, to taste
I’ve showed you how to dice a mango before, no?
Look how fun that is!!
Chop and dice all of your ingredients up. Try not to eat half of the mango in the process. Sorry, I’m still obsessed.
Combine all ingredients into a big bowl and mix lightly. If you aren’t a fan of chunky salsa- you could definitely put everything into a blender or food processor. But when I am using fresh, beautiful ingredients such as these, I prefer to show them off.
I made this salsa for dinner with my mom and dad [hi!] and we used it on top of some pecan crusted chicken. [another recipe I need to share, ASAP]
PS: anyone who can count how many times I [over]used the word “Fresh” wins a prize!
