The Easiest Chipotle Chicken, Ever

If I could pin point the time that I really fell in love with cooking, I would say that it was two years ago when I took a six week cooking class series at a local, magnificent grocery store known as Market District. It’s the type of beautiful establishment that you I want to get lost in on a Sunday morning somewhere between the remarkable produce display and the impressive bulk bin selections.

I’m obsessed, to say the very least.

Anyway, each week’s class covered a different topic including basic knife skills, soups and sauces, seafood, meats, poultry, and desserts. I graduated as a dicing-chopping-hollaindaise whisking- steak grilling- cupcake ruining – machine. It was exciting and challenging and pressure free.  I literally learned so much from those classes, and I really cannot say enough about them.

Fortunately for me, it has come full circle! Giant Eagle, the owner of Market District, recently reached out to me about my lil old blog here. They so kindly sent me a gift card and samples of Campbell’s New Skillet Sauces to try out on my own!

While I love nothing more than the smell of sauce simmering all day in my house, I realize that it’s quite impossible to achieve that cooked-all-Sunday-flavor when you want it, like right away, on a weeknight. Until now, my friends!

I paired the pouch of Creamy Chipotle with Roasted Corn & Black Beans sauce with some boneless, skinless chicken breasts in a skillet while I was  roasting some veggies in the oven. 15 minutes later — a delicious dinner was served!

Dice up your chicken breasts and brown in a skillet with some oil. Pour your sauce packet of choice [ I chose the Creamy Chipotle] over the browned chicken breast.

Quickly bring the sauce up to a boil, and then reduce to simmer for another five minutes.

Pair your saucy chicken with vegetables of  your choice, over pasta or rice, or even over some nachos [ per my roomie!] The creamy, slightly spicy sauce gave the right amount of kick to the previously plain-old-chicken while simultaneously infusing my veggies with all the zing and pow I could handle on a Monday night.

Cooking excites me. Especially when it is this easy.
